
Savory Tart with Broccoli and Blue Cheese

For the tart
In a mixer place your hook for kneading.
Add the flour, butter, salt and half the water.
Start kneading in medium speed and slowly add the rest of the water in small quantities until they mixture becomes one.
Remove from the mixer and after shaping a ball with it, wrap it in cooking membrane and let it rest for 15-20 minutes in the fridge.
Prep a utensil appropriate for tarts, like the one pictured, which is ideal.
If you don't have one like this, use a round or rectangle pan after spreading some butter on the surface or placing some cooking paper.
Spread the dough evenly all over the surface covering the sides too.
Make sure the dough has the same thickness after spreading, in all places, the sides as well.
Be quick while doing this as you don't want the dough to loose its temperature and the butter that we used to make it, to melt.
Once you are done, start poking it using a fork and create holes as shown in the picture. This will help your dough rise.
Cover it with some cooking paper and on top of that, spread chickpeas or beans, covering the whole surface of the dough.
Bake in the oven for 25-30 minutes and remove form the heat once it starts turning brown, to then add the filling and cream royal and bake again.
At this point it would be good to start boiling the broccoli if its not ready yet, strain it and leave it on the side.
For the cream Royal
Put all the ingredients into a bowl and stir well.
Leave it on the side.
For the Filling
Place the boiled broccoli all over the surface of the tart and do the same with blue cheese as well.
Pour the cream Royal mixture, making sure it goes everywhere.
Sprinkle some shredded Graviera cheese on top and bake at 175C degrees on the air setting for about 40 minutes until the surface of your tart turn golden.
Notes
- In the dough you could also use different spices if you wish to give her a more unique taste.
- Use the same dough recipe for ant other savory tart as well as the cream royal.
- Be careful not to over cook the broccoli when boiling it as the texture won't be nice. Keep it for 1-2 minutes in the pot before removing it. If you want it to better maintain both its taste and color place it in a bowl with iced water for a couple of seconds after boiling.
- You could also add bacon or walnuts too.
