Mayonnaise Free Potato Salad

Instructions
Wash the potatoes and place the in a pot with water covering them.
Boil for 10-15 minutes till they soften.
As the potatoes are boiling wash and chop the onions.
Keep an eye on them and once they are soft enough strain them and cut them in half or in three if they are bigger.
Place the olive oil, cream cheese, milk and mustard in a mixer.
Mix them till they turn into a nice cream.
Drizzle the mixture on top of the potatoes and add all the remaining ingredients.
Notes
- Also, if you want to avoid dairy, you could replace the cream cheese with tahini or hummus and add a different flavor to your potato salad. In this case, I would suggest that you also add some cumin and smoked paprika.
- Enrich the recipe with tuna, grilled or boiled chicken (maybe leftovers).
- The egg is another ingredient I enjoy tasting in potato salads and I would recommend using it.
- I love potato salad together with fish but I usually cook it as part of my Barbeque menu or whenever I don't want to have fries.
