Santorini’s Tomato Patties

  1. Start with the tomatoes.

    Cut them in cubes, remove the seeds and let them strain. We will only be using the body of the tomato.

  2. After thinly chopping the mint, add all the ingredients together with the thinly chopped tomato in a bowl.

    Stir the ingredients well together.

    Cover it with cooking membrane touching the mixture and put it in the fridge to rest for at least half an hour. 

  3. Meanwhile start prepping a shallow oven pan and cover the surface with some cooking paper or drizzle oil all over it. 

  4. Once we take the fridge out the fridge, pre heat the oven at 180C degrees on the air setting, while we start shaping our patties.

  5. Use a table spoon to scoop a portion of the mixture and start shaping a patty with that. Make sure to whet your spoon before doing that so that it won't stick. Shape the patties as big or small as you want as long as they have the same size so that they bake easily. 

    After placing every patty on the pan, you can press it on top with your spoon to flatten it out bit.

  6. Also make sure that you space them out properly so that they don't stick with each other while baking.

    Leave them in the oven for 15-20 minutes depending on the strength of your oven, until they are crispy and golden.

Notes

  • Accompany with strained yoghurt.
  • If you want you could add shredded feta cheese.
  • Replace the oats with carob or barley toasts. Thrust them and they will soak the liquids from the mixture. you don't have to do anything else.
