
Spaghetti with Carrot Pesto Sauce

Instructions
Fill a big about 2/3 of your pot with water.
Once it starts boiling, add the pasta of your choice and boil according to the instructions on the packaging.
Meanwhile, in a mixer add
Olive oil, the shredded carrots, pine cones, garlic, curry, cumin and pepper.
Mix it all together till it turns into paste.
Let the mixture sit in the fridge till you are done with the pasta.
Once you strain them, keep two pots of pasta water.
Add the pasta to the pot and drizzle the pesto sauce on top.
Then add the pasta, fresh pepper, and shredded parmesan cheese.
Notes
- You could choose any type of pasta, from brown rice to carob or even legumes to add to the nutritional value of your recipe.
- If you like, avoid using cheese for a strictly vegan recipe.
- You could use pistachio or walnuts instead of a pine nuts.
- You could even cook the pesto separately and serve it with breadsticks or crackers, together with some wine.
- Another option would be to cook chicken in the oven and garnish it with the carrot pesto.
- Prepare some snacks or appetizers by spreading the pesto sauce on small slices of bread and adding some tuna or thinly chopped egg on top.
