Open style spinach pie

  1. Wash and strain the greens.

    In a big bowl, massage them so that they soften and bake.

    Add the oats, half the egg whites, salt, pepper, feta cheese and drizzle with half the olive oil.

  2. In a medium size pan, lay cooking paper or drizzle with olive oil on the surface.

    Lay the pastry dough on top and cut whatever stays out of the pan after covering the sides, so that it rises and turns into a tart. 

  3. Spread the mixture with the greens on top and make sure it spreads evenly. 

  4. In a bowl, mix  the parmesan cheese with the rest of the egg whites , olive oil and drizzle it on top of the pie.

  5. Bake on the air setting at 175C degrees for 45 minutes on the lower rack.

Notes

You could: 

  • Choose different greens and herbs depending on your preference, as long as the quantities are the same. 
  • Use 4 whole eggs.
  • Replace the oats with raw frumenty or quinoa for more flavor.
  • Enrich the recipe with mushrooms.
