Greek Smoked Pork with Eggs on Pasta

  1. In a pot almost completely filled with water, boil the pasta for as long as the notes on the back of the packaging suggest.

    When they are ready, strain them and leave them to the side.

  2. Meanwhile cut the syncline into small or bigger pieces depending on your preference. 

    Shred the mizithra using the side of the grater with the larger holes and leave it to the side.

  3. In a pan put some butter and immediately add the cut syncline.

    Move on with adding the orange scratch and right away one of the eggs on top of the syncline.

    Add pepper and salt and leave it to the side.

    (Be careful with how much salt you are going to add as syncline is salty itself.)

  4. Strain the pasta, put it back in the pot, and leave it aside for a bit.

    In a small pan put butter and half our mizithra.

    Sauté it till it turns a bit brown but be careful not to burn it.

  5. Throw in the rest of the mizithra together with the pasta and stir it.

    Moving on drizzle the hot butter and the mizithra we sautéed before, on the pasta and make sure it spreads all over it.

  6. Serve the dish with the egg and syncline on top.

Notes

  • Be careful on the step with the butter and myzithra, you don't want to burn the cheese. You could lower the fire to feel more secure, but still keep an eye on it.
  • Also be carefull with the salt as syncline is salty itself. You better boil the pasta salted and not add salt in the eggs as they will take the saltyness from the syncline.
  • Try it with syncline, smoked pork meat, bacon in cubes or lard.
  • It's a different version to greek or traditional carbonara.
  • Avoid using orange scratch if you don't like it.
  • Try flavoring it with some sage leaves adding them on the step when we saute the syncline and then remove it.
  • Add more eggs if you want it ot be more rich of a recipe or turn them into omelete. I prefer the in between version, neither completely fried nor omelete.
  • Anrich it with vegetables such as thinly chopped zucchini, onion or peper.
  • You could turn it into pasta-pie, making a nest from crust and filling it with pasta and eggs with syncline.
