Fava with Caramelized Onions

For the Fava
Wash the Fava beans and place it in a pot with water, enough to cover the beans.
Add a whole red onion and let it boil for about 20 minutes till it softens. Meanwhile don't forget to stir it every once in a while so as it doesn't stick on the pot.
Once it's ready mash it with a hand-blender or in the Thermomix.
Add salt and pepper and let it aside so as it cools down a bit.
For the caramelized onions
As the fava beans are boiling, in a hot pan add some butter and the second onion after cutting it with the Julien method.
Add the sugar and lower the heat.
Keep stirring them for about 8-10 minutes until they soften and caramelize .
In the end add the caper and turn off the heat.
Let the caper in the pan for about 2-3 minutes.
Serve your fava, garnishing it with the onions and caper.
Notes
- You could use the same recipe for yellow fava beans as well.
- It also is a great match with octopus, which you could have already boiled or baked in the oven and then after chopping it add the pieces in the pan with the caramelized onions as they cook.
- As I enjoy the chunks I sometimes only use a fork to mash it. You should definitely try it some time.
