
Bobota with wild Cumin and Turmeric

Instructions
In a big bowl mix all types of flour together, the salt, cumin and turmeric.
Pre heat the oven on the air setting at 200C degrees and drizzle some olive oil on a round pan the size of a pizza approximately.
In a small bowl but some of the warm water and start dissolving the yeast in it and then, add the olive oil. Pour this mixture into the flour mixture and mix so that it goes everywhere.
Once the flour absorbs it, start pouring the rest of the water in slowly, until the dough doesn't stick that much on your hands.
Place it on the pan you prepped before and bake at 180C degrees on the resistance setting, in the oven, on the lower rack.
Make sure you keep an eye on it from time to time and if it turns brown quickly, lower the fire.
Notes
Bobota or corn bread has a much higher nutritional value in comparison to normal bread. Corn flour is usually gluten free and its a great option for everyone avoiding gluten. It also contains a lot of fiber which helps your gut. It is really filling so it is also a great option for when your on a diet as your are full with a smaller quantity of food.
- You can match it to different ingredients you might have in your kitchen. Some of the most popular variation are the ones with feta cheese, egg and yoghurt, or the sweet variation with sugar and raisins.
- With using corn flour you could also make polenta as a complementary to meats with lemon or read sauce. Mix corn flour with broth, butter and spices of your choice. The final result looks like a pure.
- Μην ανησυχήσετε αν δεν φουσκώσει πολύ, γιατί αυτό είναι το σωστό. "Ανεβαίνει" μόνο λίγο, σε σχέση με τον αρχικό της όγκο.
- Don't worry if it doesn't size up significantly, it's not supposed to. It rises just a bit comparing to its staring size.
