Strawberry ice cream in 2′

Description

Another very easy and fantastic dessert and specifically ice cream, which I was inspired for by thermomix and I'm now sharing it with you. Its texture will delight you and after tasting it you won't be able to stop. And why stop since its ingredients are so simple and healthy? You can adjust the amount of sugar you will use or even skip it completely.

Use this recipe to enjoy at your porch during the summer as well as a part of your diet menu since no dietitian will oppose.

  1. In a mixer start mixing the lemon with the egg white in medium speed so that they turn into a méringue. 

    If you have to, use a special accessory. I use my thermomix with the butterfly fixture, for example.  

  2. Continue with adding the strawberries, sugar and cardamom.

    Mix them well not on high speed though until they turn into a cream, like mousse.

    It's ready to serve! 

Notes

 

  • All red berries are ideal for this recipe, so you could also use raspberries, blueberries etc.
  • Be careful when making the méringue. Steady and medium speed is the perfect combo. You could also mix it by hand for an amazing result too.  
  • Once I even made it with frozen bananas and it turned really chewy and nice. Definitely try it and serve it with crushed biscuits and caramel sauce.
  • Add some nuts, simple or caramelized, for a more crunchy texture. 
  • Keep it in the freezer to serve later, however i tastes best when eaten right away. 
  • If you are to keep it in the freezer I have a suggestion for you. Once that I made it with mango and stored it like that, when I wanted to serve it, I put it in my thermomix (or in a mixer) together with some Bacardi or tequila, I mixed it well and it turned out like a margarita cocktail, which was delicious.  
  • You could obviously skip the alcohol and serve it together with some juice and ice for your children. 
  • For an even more healthy option, add chia seeds, flaxseeds etc.
