Chicken pie with peppers and graviera cheese

Ingredients

  1. Warm an anti-stick pan up and pour half the olive oil.

    Add half the chicken in the pan and saute it from all sides.

    Remove from the fire and continue sauteing the rest of the chicken.

  2. Once you are done with the chicken that was left, place it on a cutting board.

    Start cutting your chicken in very thin slices usinf a sharp knife or a pair of scissors. 

    Put all your vegetables and herbs in the pan an dlower the fire. 

    Once you are done cutting the chicken, add it in the pan together with the rest of ingredients and let them cook all together.

    Let it cook slowly for about 15-20 minutes.

  3. Pre-heat your oven at 180C degrees on the air setting.

    Spear olive oil all over the baking pan you are going to be using or place cooking paper on it and then add one of your pastry sheets on top. 

    Make little holes all over it with a fork to prevent it from puffing up.

  4. Add all of the ingredients you were cooking before on top and make sure it spreads equally on your pastry sheet.

  5. Sprinkle the shredded graviera cheese on top.

  6. Stir all your ingredients together and add one egg after mixing it well by itslef.

  7. Cover everything with the second pastry sheet and poke this one with a fork too.

    Mix one more egg with some olive oil and spread all the surface of the pie.

    Bake it for 45 minutes on the middle rack in the oven.

Notes

  • You could slice the chicken in very thin stripes form the beginning before cooking, however after sauteing it is much easier.
  • You could even use homemade dough for your pie. in this case, use two pastry sheets on the bottom, two on the top and one in the middle. 
  • By replacing the chicken with soy or removing it from the recipe completely, you can turn it completely vegetarian. 
  • Enrich the recipe by usinf more vegetables such as zuchinnis, eggplant, broccoli or cauliflower.
  • Use feta cheese or bleu cheese instead of graviera.
  • Let it rest and cool before cutting and serving it.
  • You could prepare single muffins and serve them in a buffet or take them to work/school as a a snack.

It's a delicious pie that can also be part of your menu when organizing an Adult birthday party.
