
Zucchini Bread

Instructions
Shred the zucchini in a mixer or with a hand grater.
Strain it well using our hands until all of the liquids are gone so there is none left in the pie later on.
In a different bowl, put all the rest of the ingredients, besides the shredded zucchinis, and stir it all together.
Add the shredder zucchinis to the bowl with the mixture we created before (with flour, cheese, etc.)
Use olive oil to lather the pan we are going to use (one that is used either for cake or bread) and sprinkle the grated toast, covering the sides and bottom of the pan.
Then pour the mixture into the pan making sure it's even everywhere and garnish using the sesame seeds.
Bake the bread in a pre-heated oven at 180C degrees, choosing the air setting, for 45 minutes, placing it on a low rack in the oven.
Notes
- As zucchini is an ingredient with plenty of water, we really need to be careful while it bakes so it can be baked enough from the bottom and we can then remove it easily from the pan and at the same time, it has a nice texture when we eat it.
- The trahana or oats which we will be putting in the dough, are used exactly in order to soak some of the liquids zucchini has.
You could replace some of the ingredients as listed below:
- Only use egg whites instead of whole eggs and just add two to the count.
- Pick a low-fat cheese or cottage cheese/mozzarella
- Use 100gr shredded oats instead of flour
- Sprinkle the pan with shredded cashews or any type of nut instead of toast.
- Skip lathering the pan with olive oil and sprinkling it and use non-stick baking paper instead. (Probably the best solution!)
- For an interesting smell, you could also use 2-3 leaves of mint
- ATTENTION: be careful when taking the bread out of the pan as it's pretty sensitive and could easily fall apart if it's not crispy enough at the bottom.
- Use a spatula instead of a knife
- Don't use cheese if you want to turn the recipe vegan!
