
Sweet-Potato Pancakes
Description
A recipe that I was inspired to make by cookidoo's platform, found in my Thermomix. It means that I experimented again and... behold the result. A savory version of sweet potato pancakes, accompanied by homemade Roquefort sauce or caramelized onions.

Start by prepping the sweet potatoes. Wash and cut them in pieces.
Boil them in a pot with water covering them until they soften.
You could also place them on a pan instead of boiling them and grill them or bake them in a pre heated oven, on the air setting, at 200C degrees for about 20 minutes, until they soften.
Once they are ready, mash them well in a blender or using a fork and place them in a bog bowl.
In that same bowl, add the egg, vinegar, milk, (melted) butter and mix together with the mashed sweet potatoes.
At this step I used my Thermomix. You could use yours if you have one, or a mixer, or just a fork.
Once all our ingredients turn into one. Continue with adding the flour, baking powder and cooking soda.
Stir and add your herbs.
Heat an anti-stick pan up and sprinkle some olive oil or melted butter to fry your pancakes.
Using a big spoon pour small portions of your mixture into the pan creating little circles witch are going to be your pancakes.
Make sure to leave enough space between them so that they don't stick to each other.
Once little bubbles start to forma nd you can easily pick them up with your spatula, turn them so that they fry on the other side too.
Leave each side to fry for about 1-2 minutes.
Notes
- Accompany them with a homemade blue cheese sauce (1 table spoon blue cheese, 3 table spoons strained yoghurt, 1 table spoon olive oil, milk and fresh pepper).
- Sautéed mushrooms or caramelized onion would make a great match too.
- Make sure to check the fire frequently as you don't want to burn them. Start at 9 to warm up your pan, lower to seven with the second batch and then to 6 if you have more mixture left. This way your pancakes will be perfect and golden.
- You could make them bigger or smaller depending on your preference. If this is your first time making pancakes I would recommend keeping them on the smaller side as they are easier to handle.
- You could add other herbs such as smokes paprika, cumin and this way give a different aroma.
- For a sweet variation, skip salt and pepper, add sugar or any other sweetener of your choice (2 table spoons) and vanilla extract as suggested by Thermomix.
