Cake with a Crunchy Base and Strawberries

For the base

  1. Put the cereal in a mixer together with the peanut butter and mix them.

    You don't want to trust them completely but just break them a bit.

  2. Prep a pan sized around 25-30cm.

    Place them mixture in the pan and spread it evenly so that the base is formed.

    Keep it in the fridge until the cream is ready.

For the cream

  1. In a mixer, mix the plant-based heavy cream together with the powdered sugar and cream cheese, at medium to high speed, so that you create an almost solid mixture.

  2. Place the cream in the pot with the base and spread it evenly.

    Try for the cream to have the same height in the whole surface.

  3. At this point, cover the cream with cooking membrane touching it and put it back in the fridge.

    You need to leave it at least for an hour in the fridge, and it would be even better if you could leave it in for a whole day and garnish it the next one.

To garnish

  1. You could decorate with fresh strawberries cut in half. Place them perimetrically creating a wreath and sprinkle some chocolate flakes in the middle.  

Notes

  • If you don't have a mixer you could use a store-bought whipped cream.
  • Be careful when making the whipped cream. The speed needs to be medium to high and not high as it might destroy it completely. 
  • If you want prep both a chocolate and vanilla cream and have them combined on the cake. Add chocolate drops or other ingredients to the cream to play with the texture and flavor. 
  • Add strawberry pieces to the cream filling for a more strawberry taste.
  • In the base, you could replace peanut butter with any other plant-based butter such as nut butter or almond butter. The same applies to garnishing. 
  • You could also melt some chocolate of your choice with the cereal. Once it cools you'll have an even crunchier result.
  • This type of cereal maintains its crunchy texture when others soften and the result is not the same.
  • As for the strawberries you could replace them with any other fruit or even marmalade such as cherry or blueberry.
  • A caramel sauce could change your cake completely. Choose cereal bites to mix with caramel for the base. Add bananas to the rest of the cream ingredients before spreading them on top of the base. In this case, you could also garnish with crumbled cookies and drizzle melted caramel or caramel syrup on top.
