


Place the rusk in the mixer and crumble them using it.
Add the butter and mix them together till they become one.

In a pan that unbuttons, create a base for your cheesecake and, if you want to, raise the mixture a bit and on the sides. Keep just a little bit less than half of the mixture and leave it to the side.

Add all of your ingredients to the mixer and once they all turn into a fluid cream, move it to a pot.
Start heating it up in low heat and don't let it boil.
(For everyone using a Thermomix, boil the mixture in 70C degrees for about 5-7 minutes)

Let the cheese mix come to room temperature and spread it on the base you made before.
Put it in the fridge so as it hardens. The Agar Agar as it cools down, solidifies so it would be good to stay in the fridge for at least an hour.
As the feta mouse is in the fridge, start prepping the cherry tomato jam.
Wash and pat dry the cherry tomatoes.
In a pan that has been on heat, put butter and after a minute or so, add the tomato paste, sugar and cinnamon.
Stir the ingredients for a bit and add the cherry tomatoes whole.

Lower the heat and let the liquids from the cherry tomatoes evaporate. Be careful not to overcook them as we want the jam to be quite fluid so as it spreads evenly. Have in mind that it will be a lot more solid once it cools down, so once you see little bubbles forming, it has caramelized and looks shiny, it's ready.
Let it cool down and once the mouse is ready too, spread a good amount of jam on top of it.
Garnish with mint or basil.
