Red Cabbage Salad

Ingredients
    For the Salad
  • 3 cups Spinach (just the leaves)
  • 1 cup Red Cabbage
  • 2 tablespoons Pineapple (dried, fresh or canned in juice)
  • 2 tablespoons Walnuts (thinly chopped)
  • For the dressing
  • 4 tablespoons Olive oil
  • 1/2 teaspoons Ginger (powder)
  • 1 Lime (just the juice)
  • 1 teaspoon Honey
  • Pepper
  • 1 Soy (sauce)
Instructions
  1. Wash the spinach well and strain it.

  2. Cut the cabbage really thin.

  3. Put the vegetables in a salad bowl together with the pineapple and walnuts.

  4. In a bowl mix all the ingredients for the dressing.

    Don't add salt as the soy sauce is pretty salty already.

  5. Drizzle the dressing over the salad a couple minutes before serving.

Notes

 

  • You could use a mixer to cut the cabbage if you prefer to: cut it in smaller pieces, as big as pears and put a couple in the mixer for 1-2 seconds. Cut them and continue with the rest. 
  • If you use canned pineapple in juice or syrup, you could replace honey with one of the two, always adding the same quantity.
  • If you shut the membrane well, you could preserve it for up to 8 hours as long as the dressing is not already on. 
  • A very easy and impressive recipe for a holiday dinner such as New years.
