Quick Tomato soup

Ingredients
  • 4 cups Tomato (juice)
  • 4 teaspoons Cream cheese (low fat)
  • 4 teaspoons Olive Oil
  • 1 teaspoon Paprika (sweet or spicy)
  • Salt
  • Pepper
  • Basil (dried)
  • 1 teaspoon Honey (or coconut sugar)
Instructions
  1. In a small pot. pour the tomato juice together with all of the ingredients except the cream cheese and basil.

  2. Once it starts boiling, turn off the fire, stir well and serve it in bowls.

  3. Add a table spoun of cream cheese stir it and garnish with some basil.

Notes
  • You can add on the nutritional value of the recipe by adding flex seeds or chia seeds.
  • If you want the texture to be more dense, add a table spoon of oats when boiling.
  • You can enrich the flavor of your dish, by adding a table spoon of butter. This really gives a lot to the taste but you have to know that it also adds calories to the dish.
  • You can make it more spicy by sprinkling some chili powder on top. It really matches the taste.
  • If you want to you can also eat it cold, by using tomato juice again, feta spread and two mint leaves. Instead of warming it up, add 2-3 ice cubes.
  • Add salt and pepper according to your liking.
  • Serve it with some toasted bread or bread sticks.

A great option for a diet menu and a quick and easy solution when wanting dinner or a snack.
