Broccoli soup with blue cheese

Ingredients
  • 1 Broccoli (or a pack of frozen broccoli)
  • 1 Potato (large)
  • 1 Onion (medium)
  • 1 Bouillon Powder (or 1 table spoon homemade broth)
  • 1 cup White Wine
  • 100 grams Blue Cheese (or Roquefort)
  • 2 tablespoons Cream Cheese (or 1 cup heavy cream)
  • 4 tablespoons Olive Oil
  • 1 tablespoon Butter
  • Salt
  • Crashed Red Pepper (or spicy paprika if you want to add spice)
  • Pepper
Instructions
  1. Cut the broccoli into small pieces and wash it carefully.

    Peel the potatoes and cut them into cubes.

    Pour olive oil into a pot and sauté the onions for 3-4 minutes.

    Move on with the potatoes and lastly the broccoli.

    Then, add salt, pepper, and the rest of the spices.

  2. Next, pour the wine.

    Add the vegetable broth, around a litter or the cube with again a litter of water this time to cover all of our ingredients.

  3. Cover the pot with a lid and let it boil, for about 20 minutes, till the vegetables soften

  4. Put half of the Roquefort in and turn the soup into volute using either the hand blender or a mixer.

  5. Then add cream cheese or some heavy cream and butter.

    Garnish with the Roquefort, stir it and it's ready to serve.

Notes
  • You could choose not to add potato, to avoid carbs and to keep it low on calories
  • Also you could use low-fat cream cheese instead of heavy cream.
  • If you prefer you can find low-fat blue cheese in the market.
