A recipe that I was inspired to make by cookidoo's platform, found in my Thermomix. It means that I experimented again and... behold the result. A savory version of sweet potato pancakes, accompanied by homemade Roquefort sauce or caramelized onions.
Start by prepping the sweet potatoes. Wash and cut them in pieces.
Boil them in a pot with water covering them until they soften.
You could also place them on a pan instead of boiling them and grill them or bake them in a pre heated oven, on the air setting, at 200C degrees for about 20 minutes, until they soften.
Once they are ready, mash them well in a blender or using a fork and place them in a bog bowl.
In that same bowl, add the egg, vinegar, milk, (melted) butter and mix together with the mashed sweet potatoes.
At this step I used my Thermomix. You could use yours if you have one, or a mixer, or just a fork.
Once all our ingredients turn into one. Continue with adding the flour, baking powder and cooking soda.
Stir and add your herbs.
Heat an anti-stick pan up and sprinkle some olive oil or melted butter to fry your pancakes.
Using a big spoon pour small portions of your mixture into the pan creating little circles witch are going to be your pancakes.
Make sure to leave enough space between them so that they don't stick to each other.
Once little bubbles start to forma nd you can easily pick them up with your spatula, turn them so that they fry on the other side too.
Leave each side to fry for about 1-2 minutes.
