Description

This sandwich is my favorite light, summer dinner recipe.  I prefer to make it using whole grain bread, fresh bio tomatoes, shredded feta cheese, olive oil and fresh thyme. I think I already have you attention. 

Ingredients
  • 1 Whole Grain Bread (a big slice)
  • 1/2 Tomato (cut in 2 half moon shaped pieces)
  • 2 tablespoons Feta Cheese (shredded)
  • 1 tablespoon Olive Oil
  • 1 tablespoon Thyme (fresh)
  • 1/2 teaspoons Salt (thick or Himalayan)
  • Pepper (thick)
Instructions
  1. Place the bread on the plate your are going to be serving it on and sprinkle the olive oil on top. 

  2. Wash and cut the tomato.

    Place it on top of the bread. 

  3. Continue by adding the feta cheese on top. 

  4. Finish your plate by adding the thyme, salt and pepper.

Notes
  • With this sandwich recipe you can add a couple extra steps, taking it to the next level.  
  • Toasting the bread will make it crunchier and make a great combo with the tomato. 
  • You could also toast on a grill or the airfryer together with the tomato and cheese. 
  • Before serving you could add caper or olives. 
  • Replace the bread with rusks and turn it into bites as part of your next buffet on your porch at summer night.
