

This salad is a very simple summer variation for zucchinis. You can serve it as part of your buffet either hot or cold. It matches perfectly with both meat and fish and even chicken as well.
Wash and peel the zucchinis.
Cut them in big pieces and place them on a pan with cooking paper.
Drizzle half the olive oil on top and add salt and pepper.
Bake in the oven or airfryer for 10 minutes at 180C degrees.

Once they bake, move them to the plate you are going to be serving them on.
Cut the pepper thinly and garnish it on top together with the shredded feta cheese.
Add salt and pepper if needed as well as oregano.
