Salmon Tartar with Quinoa

Description

I prepared this recipe for you so that you have another delicious option for meal-prep. Salmon for this recipe needs to be fresh because it will not be cooked. As it stays marinated, it can be consumed on the same or the next day. It will enrich your dishes with its fresh and special flavor.

It is one of the most ideal suggestions for a Diet Menu, since it has high nutritional value, minimal fat and definitely a very quick and easy proposal for your meals.

Ingredients
  • 400 grams Salmon (a big fillet or two smaller ones)
  • 1 cup Quinoa (multi colored, washed and strained)
  • 1 tablespoon Olive Oil
  • 1 teaspoon Garlic (powder)
  • 1 tablespoon Mustard
  • 1 teaspoon Honey
  • 1/2 tablespoons Chili (powder)
  • 2 teaspoons Onion (dried)
  • 1 tablespoon Chives (dried)
  • 1 Lime (the juice (optional))
  • 6-8 Coriander (fresh, just the leaves or parsley)
  • 1 Cucumber (thinly chopped)
Instructions
  1. Start by boiling the quinoa in a pot with water covering it by two fingers height.

  2. Wash the fillet (or fillets) well.

    Using a sharp knife, cut it in very small pieces.

    Add the salmon in a bowl together with lime, mustard, salt, pepper, chili, garlic, onion and chives.

  3. Massage the ingredients together and with a cooking membrane touching the mixture, let it rest in the fridge, so that it marinates till the quinoa and cucumber are ready. 

  4. Once the quinoa "breaks" and turns into very small balls, its ready.

    Strain it and put it back in the pot, withdrawing it from the heat though.

    Add salt, pepper and some olive oil.

  5. Thinly chop the coriander or parsley and the cucumber in small cubes.

  6. Style your dish as shown in the picture and garnish with coriander or parsley.

    Enjoy it both cold or hot.

Notes

 

  • In this tartar you can add ingredients of your preference such as caper, fresh chili pepper, avocado, sesame seeds or pumpkin seeds. 
  • Intense flavor is the characteristic of this recipe, so make sure you marinate it well (more than 10 minutes) for the best results. 
  • Don't forget to cover the salmon well with the cooking membrane touching it as bacteria grow when there is room left.
  • Use this salmon filling with pita bread or to garnish in salads. 
  • You could also use it on top of toasted bread with some olive oil and garlic, as well as some pesto or cream cheese, to  make bruschetta.
  • For a cold pasta dish, add the salmon tartar together with some thinly chopped fresh onion and avocado.
  • You could also use rice paper to make rolls or seaweed for some homemade sushi.
