Salad with raw Beetroot and Celeriac

Description

This salad is a unique suggestion for you to branch off your usual meals without adding a lot of calories to your diet either. I think the variety of ingredients and meals is one of the biggest secrets for success when it comes to following a healthy diet. At the same time all nutritionists suggest that we include a variety of foods and vitamins to boost our health and metabolism.

Ingredients
  • 2 Beetroots (medium sized, peeled and cut in four)
  • 1 Celeriac (as big as an apple, peeled and cut in four)
  • 1/2 Onion
  • 1 Apple (peeled or not and cut in four)
  • 1 Carrot (peeled and cut in three)
  • 2 tablespoons Walnuts
  • 2 tablespoons Olive Oil
  • 1 teaspoon Honey
  • 1 teaspoon Ginger (fresh, shredded or powder)
  • 1 tablespoon Coriander (or parsley (optional))
  • Salt
  • Pepper
Instructions
  1. Wash all the vegetables and coriander.

    Peel them, cut them in pieces as instructed above.

  2. In a mixer, put all the ingredients one by one. First the beetroots, then the celeriac etc.

    Mix them until they turn into something like chickpeas. Careful, we don't want them to thrust completely.

  3. Move all your ingredients into a bowl and mix them well together.

  4. Ideally, leave the salad to marinade for 1-2 hours before serving.

Notes

In this salad you could add or remove ingredients according to your preference. This particular recipe is my suggestion for you to try something different to the usual recipes and vegetable combinations.

  • It is important that you don't cut your vegetables in very small pieces so that you can taste each ingredient and don't loose its presence in the salad.
  • You could always cut them really thin if you want and add a dressing of some sort or mayonnaise and serve it this way as a Russian salad.
  • This salad can also be consumed pleasantly, on the next day, as the longer it marinades the better the taste gets.
