Red Garlic Dip with Beans

Ingredients
  • 250 grams Beans (medium sized)
  • 4-5 Garlic (cloves chopped they way you prefer using them)
  • 1 Red Pepper (baked or a table spoon dried)
  • 1 tablespoon Tomato (paste)
  • 1/2 tablespoons Taste (dust, store-bought or homemade)
  • 1/2 cups Olive Oil
  • Salt
  • Cayenne Pepper (tastes great with it)
Instructions
  1. Leave the beans soaking in cold water from the night before.

    On the day you want to cook them, strain them and boil them in freshwater until they are soft without adding anything else to them.

    In 20-30 minutes they will be ready.

  2. After cooking them put them in a mixer.

    Add the rest of the ingredients and mix them at high speed until you are left with an even mixture.

  3. Serve them, after adding some olive oil and garnishing with dried pepper or cayenne pepper.

Notes
  • It makes a great side dish for both meat and fish.
  • It can also be used as a sauce in appetizers accompanying tsipouro or wine, with some anchovies or olives. 
  • Use it in tortillas or even as a side dish for your Mexican food nights.

It is a great match to your Lent menu as well as an original dish to serve on Clean Monday as well as when having Vegetarian Guests over.
