Pancakes with Graviera Cheese

Description

My dear ones, I do not like pancakes, but the ones with their cheese, their graviera made me mad. I couldn't stop. I know, I supposedly prepared them for the children! Yes, ok!

It is a variation that I like for a summer breakfast and for snacks to take it with me to the office, on the beach and an accompaniment to my wine while on a summer night at the porch.

Ingredients
  • 150 grams Flour
  • 200 grams Milk
  • 2 teaspoons Baking Powder
  • 1 cup Cheese (shredded graviera)
  • 1 Egg
  • 1 tablespoon Butter (save some for frying)
  • Salt
  • Pepper
Instructions
  1. In a bowl mix all the ingredients together and in the end add the baking powder and flour.

    Mix everything together until all the ingredients become one runny liquid. 

  2. In a big anti-stick pan, after pre heating it, add some butter and spread it all over the surface of the pan. 

  3. Using a big spoon start pouring the mixture you created before into the pan, making little circles, that are going to be your pancakes. 

  4. Let them fry for about 1 minute. Once we notice bubbles forming, lower the heat at 6 and turn the pancake to fry on the other side for about a minute as well. 

    Keep doing this until all your pancakes are ready and your mixture is gone. 

  5. Serve them warm or in room temperature.

Notes
  • If you want you can sprinkle some shredded cheese on top.
  • You could also add thinly chopped cured meats such as bacon, ham. or sausage to enrich your pancakes. 
  • You could even add vegetables such as colorful peppers which would give them an impressive look (great idea for a buffet) 
  • You could even make them sweet by adding tahini, chocolate, peanut butter etc.
