

With this shrimp orzo you will discover beauty through the simplicity of the ingridients. Compliment it with your favourite white wine and music, ideally enjoying it on a balcony!
Warm up a short and wide pot.
Add the shrimps and let them cook from both sides for around two minutes till they turn a little brown.
Then, immediately leave them on a plate and continue with the recipe.
Add a bit more olive oil (optionally) and throw the onion and garlic in the pan.
After 2-3 minutes add the orzo and sauté the ingredients.
Lower the temperature in half and pour half the wine in our pan.
Stir it for a bit and pour the rest of the wine, only when the previous portion has been fully absorbed.
Do the exact same thing but for the broth this time, in low temperature, until our orzo is cooked.
Then, add the shrimps, pepper and chili flakes.
Pull it away from the stove and cover it.
Let it rest for around 5 minutes and it is now ready to serve.
It's very possible that the orzo doesn't boil correctly. That's why while it's still white, taste it and if it's just a tiny bit hard pour the last portion of the broth, cover it with your lid and then pull it away from the fire. After letting it rest for 5 minutes, it will absorb the liquids and be just right.
It's a great addition to your Clean Monday menu, cook it during Lent but at the same time it's a perfect choice for a romantic Summer on the porch, accompanied by your favorite white wine.
